HOJIBLANCA VARIETY

Its aroma will remind you of walking into an orchard, with notes of green tomato and avocado. Its grassy fragrance will remind you of an early morning walk through a farm surrounded by fresh grass, of nature, of mountains, thanks to its flowery, Mediterranean notes.

EARLY HARVEST

Formerly known as “first pressing” or “cold pressed”, obtained from the first olives harvested in the month of October. A fresh extra virgin olive oil.

HEROIC OLIVICULTURE

Hand-picked on high slopes from centennial and bicentennial olive trees

PROCESS

An EVOO obtained on the first day of the harvest, from the first bright green olives. The olives are cold extracted (at 22 degrees) throughout the grinding process in order to preserve all their aromas and healthy properties (polyphenols) and are kept at a controlled temperature in our cellar until they are sold.

AROMA AND FLAVOUR

Due to its intense flavour and health values, this oil is ideal for using raw (toast, salads, tartare, carpaccio, sauces, dressing for fish, meat and vegetable dishes...). An EVOO with a flavour to remember.
