General Manager of Aceites La Muralla, Manuel is an agricultural engineer and a passionate advocate for extra virgin olive oil, farming, and the natural world.

From a young age, he was determined to carry forward the family legacy and broaden its horizons, bringing a professional approach to the oil mill's operations and introducing the innovation required by the evolving demands of modern agriculture and olive oil production.

With a degree in Business Administration, Mª del Carmen Morales is considered a true legend within Aceites La Muralla. She has been part of our mill since 2001, during the time when Jorge Villén—uncle of our current Managing Director, Manuel Villén—was the company’s legal representative.

Over the years, Mª del Carmen has built lasting and meaningful relationships with the clients she met upon joining the company, as well as with those who have come on board since.

She is renowned for her unwavering dedication, professionalism, and determination.

Amparo serves as Customer Service Manager, Order Coordinator, and Administrative Officer at Aceites La Muralla.

Since 2018, she has been the public voice of the company, handling every enquiry from clients and suppliers with clarity, precision, and efficiency.

In addition, Amparo brings with her a wealth of knowledge in printing and packaging, making her an invaluable asset in the customisation of bottles and cases for our extra virgin olive oil.

Pilar is responsible for digital marketing, e-commerce, and the coordination of the various marketplaces in which Aceites La Muralla operates.

A true enthusiast of the culinary world, she enjoys bringing creativity and a passion for writing into this field.

Pilar has worked across a range of sectors, both in Spain and abroad, before joining the team at Aceites La Muralla.

Cristina holds a degree in Marketing from the University of Málaga (UMA) and has gained experience across various sectors, making her a highly versatile and adaptable professional. As a native of Zambra, she has a personal connection to Aceites La Muralla, with some of her ancestors having also worked with the company.

Cristina demonstrates dedication in every client call she handles and in each marketing report she prepares. She has a genuine passion for the world of olive oil and is eager to learn the intricacies of this sector—one that is as traditional as it is unique.

Master miller with over 40 years of experience.

A dedicated, meticulous, patient, and deeply committed individual, Antonio began his journey as a young man at the former location of Aceites La Muralla. Over the decades, he has witnessed technological evolution, all types of harvests, a global pandemic, and the generational transition of the Villén family.

Each day, he brings the best of his craft—Antonio is, quite simply, a walking encyclopaedia of olive oil production.

Internally, we like to say that Antonio is just like our 5-litre bottle of Hojiblanca—good for everything. With his trademark professionalism and sense of humour, Antonio oversees logistics and bottling at Aceites La Muralla, while also safeguarding the mill premises with great efficiency.

A qualified electrician, he joined the Aceites La Muralla facilities in 2015 and has since become a key figure in keeping our internal processes running in perfect sync.

After spending much of his professional life in the construction industry, José Manuel made a bold career shift into olive oil production. He started with the most basic tasks, but through perseverance, reliability, and a deep passion for a job well done, he rose to become the head of olive milling at a cooperative. Today, he combines hands-on experience with a forward-thinking approach, embracing innovation to craft extra virgin olive oil of the highest quality.

A member of the Villén family and great-great-grandson of the founder, Jorge is an Agricultural Technician and has worked as a field technician since the very beginning of his professional career. He manages the family estates, including the emblematic Finca Los Chopos—home to the traditional olive grove from which our premium extra virgin olive oil originates.

Jorge has an extensive background in the agricultural sector, with deep knowledge of Andalusian olive cultivation, the geography of the Subbética region, and the suitability of its various areas for different crops and olive varieties.

José has been a key figure on the Villén family estates for over 30 years. He performs essential agricultural tasks, such as olive harvesting, field cleaning, grass collection, and more, all with great expertise.

José knows the Finca Los Chopos like the back of his hand, having lived and raised his family in the farmhouse that stands in the area. Today, he remains dedicated to the values of the company and the craftsmanship passed down through generations.
